This is a wonderfully easy and delicious side dish or snack: chopped potatoes, onion slices, minced garlic, fresh or dried parsley, coarse Celtic sea salt, and pepper – all baked in a pan coated in coconut oil at 400°F, until golden with crispy edges.

I love roasted potatoes! What increments did you use for the ingredients? Those look delicious!

Bethany, I actually don’t measure the seasonings, but instead sprinkle them until it looks like a good amount.

My family has done potatoes very similar to these, only we don’t put onions in ours. But that might be something we’ll have to try soon. Thanks for sharing!
