Gluten-Free Chocolate Chip + Peanut Butter Cookies

Gluten is a protein found in wheat, barley and rye (it’s like the “glue” that holds it together).


[DDET Why Gluten-Free?]

In April 2010 we discovered that gluten was harming my body. Immediately we began to switch over my diet: from gluten in many foods, to no gluten at all. My family has been wonderful enough to join me (for the most part) in the diet change.

A blessing in disguise has been that by removing the gluten from our diet we have all had a lot more energy – a thing we didn’t expect, but are thoroughly delighted about.

This has certainly been a learning experience, but there’s no better time than the present to learn more and more about nutrition and the effects of different foods on the body.

P.S. We’re enjoying the diet, I’ve have had many health improvements, and the food actually tastes quite wonderful!
