Chives

The sliced potatoes frying in the skillet looked in need of some fresh chive. I quickly slipped outside to the edge of the garden and cut some of the green beauty that was blowing in the strong Indiana wind.

Chives & Fried Potatoes

After a quick rinse and a few chops of the knife, the chives were tossed into the skillet to join the potatoes! It made for a delicious side dish at dinner last evening.

“Better is a little with the fear of the Lord than great treasure and trouble with it.

    Beautiful pictures. Always enjoy your blog. Could not believe your chives! Where do you live in Indiana? I live near Notre Dame and our chives are up but not even one bud on them yet. We actually had sleet one day last week. :+) I love to gather a bunch (aprox 1 ” worth) of chives, rinse, let dry on hand towel, then secure both ends with rubberbands. Next I put handi wrap around them and freeze the bundles in a lag zip lock bag. When I want some I simply push rubber band down to where I want to stop cutting and slice through the bundle (still frozen) about 1/8th inch slices. I reroll in handi-wrap the remainder of the chive log and return to freezer.

    Rachel, this time around it was just potatoes fried in coconut oil with onion and chive. But garlic is always a great addition!
